What better way to celebrate blueberries than with pie?

The Alabama Blueberry Festival held last weekend is a warm and wonderful memory. We met people from many surrounding counties and states. We all seem to have at least three things in common – to have fun, enjoy the day and try eating something BLUE!

I believe there are two times a year a person can indulge in an abundance of sweets – That’s at Christmas and during the Blueberry Season!

Standing in line at one of the local grocery stores recently, I overheard Sandra Robinson, clerk tell one of her co-workers that she couldn’t wait to go home and fix a quick and easy blueberry dessert. She shared the recipe with me. It’s called Blueberry Delight. Enjoy!

Blueberry Delight

First Layer Crust

1 cup pecans, chopped

2 cups self-rising flour

3 sticks unsalted butter,

Using a fork or pastry blender, mixed ingredients together well and press in bottom of dish. Cook in oven at 375 degrees until golden brown. Remove crust from oven and let cool completely.

Second Layer

2 cup confectioners’ sugar

1 8–ounce cream cheese

Mix confectioners’ sugar and whipped topping together well. Spread on top of crust.

Third Layer

1 can blueberry pie filling.

Spoon over second layer. Chill over-night and serve.
