Butcher’s Market to open May 7

Logan Walston sees buying a quality piece of beef as a necessity.

Walston is the owner of The Butcher’s Market in Atmore, which will celebrate its grand opening on May 7.

Walston said the reason why he wanted to open the market is because he wanted to offer residents a good choice of product.

“To be honest, I was tired of not being able to buy steaks,” Walston said. “It was then that I started realizing that every steak doesn’t taste the same. You’d have to drive an hour and a half to get a good steak. I see it as a necessity. I saw that friends and family see it as an necessity.”

Walston said the market will push more toward prime cuts of beef and from farm to table.

“We’ve pushed out to more organic products as well,” he said. “We’re trying to get a more better quality product than your regular grocery store. We’re going to be specializing in mostly beef. That’s what we wrap ourselves around. One of the main things we’re going to be pushing out is prime.”

Walston said beef is graded on a scale.

“You have different grades of beef,” he said. “A lot of people around here will get select. You have select, choice and prime is the top. That’s kind of where we’re at, pushing out the best quality product here in Atmore.”

Walston said the market will also feature pork, chicken, deli meats, cheeses and other products, including meat family packages and pre-orders.

“All of our beef, or 95 percent, will come prepped from Texas,” he said. “We centralize all of our beef to one farm for consistency. We’re getting a centered product fed the same things and slaughtered at the same place. It costs more, but you can’t beat the flavor out of it.”

Walston said the beef will come to the market — which is located on Church Street — in quarter and half sizes of the cow.

“Basically, they come to me in a gigantic box,” he said. “We’ll do the prepping and packing ourselves. It’s still that butcher shop process. We’re trying to really keep that here. It’s not like going to Walmart, where it comes pre packaged and put on the shelf. We have one-on-one packaging.”

Walston said he can pre order any products, including beef, pork, chicken and others.

“If you can give them a few days heads up, I can order anything and any quantity,” he said. “We can patty burgers. If they want it flavored and ready to be slapped on the grill, it’ll be ready to go.”

Walston added that he wanted to educate residents on the different cuts of beef.

“Each one carries different product,” he said about the cuts. “That’s what I want to do for the community as well. Nobody really understands the beef. There are a lot of cuts on a cow. Most people know five — ribeyes, New Yorke strip, fillet, etc. You’re missing out on 90 percent. I want to introduce Atmore to the stuff you can’t get.”

Hours of operation are Tuesday to Friday from 10 a.m. until 6 p.m., and on Saturday’s from noon until 5 p.m. Closed on Sunday and Mondays.
